The first dish tested one’s knife skills and the latter tested one’s ability to control heat and the degree in which the food was cooked. If you didn’t have enough experience, it wouldn’t be possible to successfully cook either one of these dishes.

Cooking required a gradual advancement in skill.
Modern-day people lived fast-paced lives and were busy with work. How could they normally have time to cook for themselves? However, there were still many people that were willing and interested in cooking despite lifestyle constraints.
